You can limit the number of submissions a form can receive in your Settings → Security section. Tick the option Limit the total number of form submissions to and specify the maximum number of submissions that you want to accept for that form per hour, day, week, month, year or eternity.
If you have an event with limited seats, you can limit the maximum number of guests permitted to your event, through your online form.
